Burrasca, Portland - recommended in Where Chefs Eat

Burrasca: Where Chefs Eat in Portland when they want La Francesina - leftover boiled beef stewed with tomato and love

Burrasca is a step back in time, as if you are walking into a 1970s Florentine trattoria according to our new guide

Portland, Oregon is well known for its many Vietnamese restaurants - less so for its Italian - though there are plenty of very good ones. Burrasca is one of our personal favourites at Phaidon.com and so we were very happy to see it among the choices in the latest edition of our global restaurant guide Where Chefs Eat. It's chosen by Cathy Whims, owner of Nostrana, Oven & Shaker, and Hamlet and the six times nominee for a James Beard Award for Best Chef Northwest. This is what she has to say about the place.

“Burrasca is a step back in time, as if you are walking into a Florentine trattoria in the 1970s. The food is religiously authentic and everything is hand-made from scratch. Chef and owner Paolo Calamai surprises you with specials like hand-rolled pici with comforting Tuscan ragu and dishes little known outside of Tuscany such as La Francesina, leftover boiled beef stewed with tomato and love.”

Burrasca  is just one of 4500 recommendations in our new guide on where to eat around the world from 650 chefs who make it their business to know what to eat where. And while the cover has changed, the idea behind Where Chefs Eat is exactly the same as it was when we published the very first edition back in 2012.

The premise is that the modern chef is a fantastic source of guaranteed good meal recommendations, from humble holes-in-the-wall - to the most luxurious places around - and every dining experience inbetween the two. And this time there are a third more recommendations than ever before.
