Baby artichoke canapés

Serves: 4 people


50g (2oz) (4 tablespoons) butter

anchovy paste, to taste

4 slices sandwich loaf, crusts removed and cut in half

4 baby artichokes in oil, drained and quartered

2 teaspoons mayonnaise


Beat the butter with a little anchovy paste in a bowl until combined, then spread on the slices of bread.

Put the baby artichokes in the middle of the slices and garnish with mayonnaise.

Arrange on a serving dish and serve immediately.
