So, how are you bearing up? Many of us are finding it hard to adjust to quite so much time at home. But just because you’re housebound doesn’t mean you should let good dietary habits drop. There are plenty of nutritious, easy recipes contained in our cookbooks. Take this high-powered smoothie, formulated by Solla Eiriksdóttir, Iceland’s leading cook, restaurateur and health-food advocate.
Her book, Raw, is bursting with simple, no-cook recipes that aim to boost your vitality. Some require you to soak ingredients overnight, but this turmeric smoothie can be thrown together in just minutes.
Here’s what you need: a ¼ cup (1 oz/30 g) hemp seeds; a cup (5 oz/150 g) frozen mango chunks; ½ a banana; a tablespoon coconut oil; 2 teaspoons of shredded ginger root; 2 teaspoons of lemon juice; a teaspoon of chia seeds; ½ –¾ teaspoons of turmeric (use either ground fresh root or powder); a ½ teaspoon of ground cardamom powder.
Put the hemp seeds and ¾ cup (6 fl oz/175 ml) of water into a blender and blend until you have your hemp seed milk. Add the remaining ingredients to the blender and blend until smooth. Pour into glasses and serve.
