Award-winning chef Zineb Hattab presents a master class in bold, flavorful, plant-based cooking

Chef Zineb 'Zizi' Hattab has earned global acclaim for her Michelin-starred vegan restaurant, KLE, in Zurich. In her debut cookbook, she turns her attention to home cooking, revealing how to create deeply satisfying plant-based meals using technique and imagination.

Vegan Vegan! offers a practical framework for building flavor with intention. With Hattab’s guidance, home cooks will learn how to incorporate umami, layer acidity, manipulate texture, draw aroma from spices and herbs, and understand the cues that guide seasoned chefs.

The book’s eclectic recipes put these skills to good use, offering ample options for everyday meals and special occasions. More than 100 dishes include savory Ramp Gnocchi; Sobrasada with Pine Nuts; billowy Glazed Sweet Potato Milk Buns; decadent Almond Baklava; comforting Plum Tart with Cottage Cheese and Cardamom Syrup; and a luscious Chocolate Coffee Loaf Cake. Dietary symbols throughout the book – gluten-free, dairy-free, nut-free, 5 ingredients or fewer, and 30 minutes or less – allow easy navigation according to dietary needs and preferences.

Vegan Vegan! also includes recipes for 30 pantry staples, such as plant-based mayos, sauces, condiments, spice blends, and aromatic foundations. These kitchen essentials are designed to create depth, balance, and structure without relying on animal products.

With a foreword by acclaimed chef Joan Roca, this is a must-have for vegans, vegetarians, and anyone interested in sustainable, plant-based eating, Vegan Vegan! is an invitation to cook boldly, joyfully, and often.

Moroccan-Spanish chef Zizi Hattab has made a significant impact on the gastronomic scene in Switzerland and internationally with her refined plant-based fine dining. She trained with the Roca brothers in Spain and Dan Barber in New York, and previously served as executive sous chef at Enrique Olvera’s Cosme in New York.

Since opening her first restaurant, KLE, in January 2020, she has garnered numerous accolades, including a Michelin Star. Gault & Millau named her Chef of the Year, and KLE became the first plant-based restaurant in Switzerland to receive both a Red and a Green Michelin Star. Her second restaurant, DAR, was listed among the 'openings to watch' by The World’s 50 Best Restaurants shortly after its debut and was awarded a Green Michelin Star in 2022.

Her career has also been recognized by The Best Chef Awards and La Liste, and she has received the Swiss Culinary Merit from the Swiss government. Working closely with family-run farms, her team builds menus around what farmers harvest, championing a more sustainable and ethical food system.

Her recognition and growth as a leading voice includes the 50 Next Hospitality Pioneers distinction and invitations to speak at international food and agriculture summits. In 2022, she published her first cookbook in German, Taste of Love.

Joan Roca is the acclaimed chef of El Celler de Can Roca in Spain.

Praise for Zineb Hattab:

‘The most memorable meals reveal something essential about the person who cooks them. Zizi’s food is generous, creative, soulful, and deeply delicious. She reminds us that vegetables can tell stories as profound as any other ingredient. Every plate is an expression of her own spirit – thoughtful, uncompromising, and full of quiet humanity.’ – Daniel Humm, author

‘I met Zizi Hattab years ago when she was heading the kitchen at Cosme in New York City. I was fresh of opening our second restaurant, Wildair, and went to have dinner. She was introduced to me as the new chef in charge and asked if she could just cook for us, instead of choosing from the menu. Her food was so different, simple, honest, and with just the right amount of something unexpected – to make something familiar something spectacular. My mom is vegan, and I always have a hard time getting into that mindset, so I am really excited about this book and being able to cook a little bit more like Zizi.’ – Fabian von Hauske Valtierra, chef and author

‘In our world, filled with options, trends, and style shifts, contention becomes not only a tool but a true luxury. The luxury of having time to focus and explore deeply, to play around, understand, and commit. Zizi's approach and perspective are not only relevant to vegetables but also to our craft as a whole.’ – Enrique Olvera, chef and author

‘I've spent time with Zizi in the kitchen when I visited her restaurants in Zurich. I must say, you can tell by Zizi's dishes that she gives it her all. Every bite is delicious, exciting, and full of passion.’ – Max La Manna, chef and author

‘Zizi’s work is a beautiful affirmation of veganism as another way of living, eating, and understanding the world. She has lived it with conviction and transmitted it with remarkable coherence. Vegan Vegan! is the result of that honesty and dedication: a generous, inspiring book not only for vegans, but for anyone willing to look beyond familiar frameworks and discover another way of cooking, eating, and thinking. It is a book with the rare ability to belong both to everyday cooking and to a more rigorous culinary practice. Zizi has given us a work of rare clarity, generosity, and conviction.’ – Karime López, chef

‘I’ve always loved the way Zizi cooks, and Vegan Vegan! is exactly what I hoped it would be. What I love most is that nothing in this book feels like an ‘alternative.’ These recipes don’t try to imitate or replace anything – they’re just genuinely delicious, original dishes that happen to be vegan. Zizi has such a natural way of reimagining familiar flavors that everything feels right, effortless, and exciting at the same time. It’s the kind of food you crave because it’s good, not because it’s vegan. I already have a few favorites that I know I’ll keep coming back to: the Mushroom Bao Buns with Harissa Mayo, Paella Temaki, KFM Burger (exactly what I want on a rainy day), and Blueberry Flatbread with Cheese and Apple Honey – which I genuinely think could become my three-times-a-week breakfast. This book will live in my kitchen, stained with use, because every recipe makes you want to cook the next one.’ – Sara Aqel, chef
