The definitive guide to authentic Brazilian home cooking, featuring more than 400 recipes compiled by the country’s most lauded chefs

Brazil: The Cookbook is the first book to cover the astonishing breadth and diversity of authentic, everyday food found across the country, from Rio de Janeiro to the Cerrado, São Paulo to Bahia.

In this extensively researched recipe collection, internationally acclaimed chefs Alex Atala and Manu (Manoella) Buffara – two of the world’s most acclaimed Brazilian chefs – share hundreds of home-cooking recipes alongside fascinating insights on the country’s ingredients, culture, history, and culinary traditions.

The book’s recipes range from traditional family meals and local delicacies to newer dishes that reflect Brazil’s evolving food scene. Dishes such as Cassava Flatbread, Beef Rib Stew with Yuca, Bahian Fish Stew, Feijoada, Cowpea Hummus, Rolled Guava Cake, and Brazilian Chocolate Truffles allow home cooks around the world to explore Brazil’s varied landscapes and experience its distinctive regional cuisines. Detailed headnotes delve into recipe origins, highlighting the melting pot of cultures, from Indigenous communities to Portugal, Germany, Lebanon, Syria, Japan, and many African nations, that have contributed to Brazil’s food today.

Chapters on Breads & Savory Pastries, Appetizers, Soups, Rice & Beans, Fish & Seafood, Meat & Poultry, Side Dishes, Cakes, Desserts, and Beverages offer a truly comprehensive view of Brazil’s cuisine, complemented by insightful narratives exploring Brazil’s extraordinary ingredients, including açai and pineapple in the North; cacao and cashews in the Northeast; heart of palm and pequi fruit in the Central-west; and dried salted beef and yerba mate in the South.

Beautifully designed and filled with gorgeous food photography throughout, Brazil: The Cookbook is an essential volume for curious home cooks, cookbook collectors, and travel enthusiasts alike.
