Native, pre-Columbian recipe such as guacavaqui meat stew, is prepared alongside more recent arrivals to the New World, such as Ethiopian injera, Vietnamese pho, and hot German potato salad, and there's no shortage of quintessentially 'American' fare, from baked beans to boiled peanuts and peach cobbler. To paraphrase a great American poet, this national cuisine is large, it contains multitudes. The key ingredient that distinguishes it from others? A sizeable dose of democracy.
