Now we've taken that expertise and we're applying it to a very select breakfast event we're hosting with Magnus Nilsson, the creator of the Faviken restaurant and book.
Don't worry, you won't have to make the journey to Magnus's remote, 12-seater restaurant on a 24,000-acre hunting estate 750 KM north of Stockholm - though if you did you'd doubtless be as impressed as we were when we went. No, Magnus is coming to London to host a one off wild Swedish breakfast at Mark Hix's Tramshed restaurant on Monday, October 8.
We've just been given the menu the Tramshed has put together, inpired by the Faviken book and under Nilsson's guidance. It features: Smoked salmon 'Hix cure' with pickled seashore vegetables, a plate of woodland mushrooms, venison Scotch egg with rowan jelly, shrimp custard with deep-fried Cardigan Bay shrimps and elderberry and cobnut drop scones with Westcombe ricotta.
